Chicken & Rice Casserole

IMG_2376With the Royals dominating like they did last year in the ALCS and [potentially] becoming World Series bound…AND the holidays coming up, the homesickness is getting real right about now just as it did last year. I can’t help but be jealous of all those fellow Kansas Citians celebrating the hype of our boys in blue doing so well, and getting to party it up at my favorite place on planet earth! The glory that is the Power & Light District:

I have story after story after story about this place from when my best friend, Melissa, slipped on a drink at *The Mothership* (our favorite bar, Pizza Bar) and danced a little jig like she was Bambi on ice before she face-planted to the floor… to when I puked on the bar at closing time one disastrous night (sorry, mom). There’s no such thing as TMI in my life. This place is a goldmine for bad decisions and throwing your inhibitions to the wind. I did that PLENTY-o-times. It’s also where Beck and I reunited that one fateful night on March 15, 2014. The memories here are endless and the excitement and team spirit that Kansas City exudes when one of our home teams is doing well is unmatchable to any other city, I guarantee. If you ever have the chance to spend the weekend in the Kansas City area, you will not regret it. We’re NOT all farms and corn and water towers. Not in KCMO, at least. We know how to party and we know how to love and support our city!

“Guys, I swear I’m not gonna get any pizza tonight before we leave because I’m really trying to watch what I eat and I don’t need all the calories from the drinking plus from a greasy slice of-who wants a piece of pizza? I’m getting 4. Actually, I’m getting an entire pizza, who wants some? Do you guys wanna go to Johnny’s for French fries, too? Who wants to go to Quik Trip for taquitos and donuts? I’m starving. Do you think the cab driver will drop us off at QT? He’s gotta drop us off at QT. OMG IF I DON’T GET QT I’M GONNA STARVE TO DEATH.”

In the spirit of loving and missing home, I’m sharing one of my favorite family recipes that my great grandma passed down to my mom, and now I enjoy making it and Beck enjoys eating it! Warning: This is not a health food or for anybody watching their calorie intake. However, LIVE A LITTLE and enjoy some butter and Campbell’s cream of [chicken, mushroom, celery] soup goodness.

Ingredients

Instructions
  1. Preheat oven to 350.
  2. Melt butter in casserole dish. Mix together all 3 soups, water, green beans, and uncooked rice. Add half soup mixture, then lay chicken on top, add rest of soup mixture. Bake @ 350 degrees for 45-60 minutes.
  3. If desired, add a can of French's French Fried Onion Rings on top!
