Every so often, my meal plan for the week falls through on a night where we have unexpected leftovers or other food to use up. I always like to keep a bag of frozen shrimp on hand to throw an easy week night dinner together. We always have salsa, shredded cheese, and seasonings galore on hand, all I had to pick up were the corn tortillas and shredded lettuce.
I prefer corn tortillas with my soft tacos and fajitas. There’s something about that gritty chewiness that I love over the soft chewiness of a flour tortilla.
Quickly cook a lb. of shrimp in oil, fajita seasonings, lime, and clianto, and you’ve got yourself a simple week night dinner that any picky
man eater will love!
***Do not feel guilty about using the pre-made packet of fajita mix from the seasoning aisle!!! However, if you do it yourself, you’re aware of what exactly is in your seasoning and you can control how much salt you want.***
