Italian Sausage & Peppers

  • 4 links Italian sausage
  • half 1 yellow onion
  • 4 medium size red potatoes
  • half 1 red pepper
  • half 1 yellow pepper
  • handful of baby carrots
  • 1 can Rotel
  • olive oil
  • 1 T dried basil
  • 1 tsp salt

Preheat oven to 350. Cut peppers and onions into strips, and potatoes into 1 inch pieces. Cut Italian sausage into thirds. Place onions, potatoes, carrots, and peppers in a 2 qt. casserole dish (that has a lid) and drizzle in olive oil. Sprinkle basil and salt all over veggies and toss. Place Italian sausage on top of veggies and top with Rotel. Bake with the lid on for 75 minutes. Remove the lid and turn on broiler. Brown sausage for 1-2 minutes on high.
